The prickly pear(Opuntia ficus indica Mill) is one of the most grown
cactus in the world. It's stems, without spine have the form of a thick racket,
with bright yellow flowers attached, that become oval green-yellowish, orange or red fruits. Before eating the fruit, we brush it under running water to remove all the microscopic hairs of the skins then we peel it. The refreshing sweet pulp have small black seeds. The fruit could be used in a variety of ways, it could be eaten fresh, as juice, as jam, as a cheese-consistency paste...
